Properties

  • Due to its special combination of sugars, the high viscosity and the ability to prevent crystallisation, AGENABON 20.131 is an important raw material for a wide range of sweet products.

Applications

  • hard caramels, soft caramels, bonbons (prevents crystallization in a mixture with other sugars)
  • gums and jellies (reduces the sweetness, prevents crystallization, improves bite and mouth-feel)
  • fillings, creams, fondant (prevents an excessive growth of sugar crystals (creamy fondant with a smooth surface and excellent sheen) Also, due to reduced sweetness, flavor is enhanced)
